So my aunt got her hands on a BUNCH of pork loins, like seriously a BUNCH and headed to family and friends and passed them out. I ended up with 11!!! YES 11 boneless pork loins all weighing in at 1-2 pounds. Now I love pork I cook pork chops all the time but I only cooked a loin once. It was good and is in my second cookbook; we covered it with my bacon jam and slow cooked in the slow cooker so nothing too fancy. Well this time I marinated and roasted it! I was so surprised with myself! While it was roasting I did get nervous because I was doing research and discovered an article on the silver skin. That tough chewy slimy exterior to the pork; I did NOT remove it so I was slightly nervous that it would be tough and chewy. Well, either I got lucky or it did not have the silver skin because it was absolutely amazing and moist and good and worthy of a happy dance in the kitchen.

The marinade was a mixture of what I found here and there online and some of my own ideas. It will be posted at the end but I am so happy I wung this recipe it is a keeper and I think it would be wonderful on chicken too! We served it with some roasted cauliflower and roasted sweet potatoes, Joe also had a side of corn on the cob.


The pork was cooked to a perfect 145 degrees was moist and full of flavor since I marinated it overnight. Was such an easy cook too I seared it on the stove and finished in the oven just took 15 minutes to roast since it was a fairly smaller sixed pork loin. I suggest you try this and let me know what you think!!!! And if you make any changes also let me know! I love new ideas!
Roasted Marinated Pork Loin
What we need overnight marinade:
1-2 pound boneless pork loin
¼ cup Avocado / olive oil
¼ cup Brown sugar I use the Truvia
3 Tbs spicy Mustard
¼ cup soy sauce
¼ cup lemon juice
2 Tbs parsley
2 Tbs basil
3 cloves crushed garlic
Pepper
2 Tbs Avocado or Olive oil
What we do:
- Oven at 400F
- Mix marinade in a bowl; everything except the pork and 2 Tbs of avocado or olive oil. Place pork in a Ziploc bag and pour marinade over. Mix well and let sit in the fridge at least 2 hours but best if overnight.
- When ready to cook let pork come up to room temp by leaving on the counter for about 40mins. Place an oven safe pan into the oven and preheat oven to 400F letting the pan heat up as the oven pre heats.
- Carefully remove oven from pan and place on a burner set for medium high heat, place 2tbs of oil. Then lay the pork and sear each side 1-2 mins
- Place into the oven for 15-25 mins depending on the size of the pork. Cook until an internal temp of 145. Remove from oven cover with foil and let rest for 5mins.
