Leftover Thanksgiving Pie

So I LOVE a good pot pie and we of course had leftover turkey from thanksgiving so why not wing it! I used Carbquicks version of low carb flour Carbalose and it is absolutely fantastic! great sub for regular flour!!! this quick crust came together with a few ingredients and NO EGG!!

The crust is simply 4oz cream cheese, 1-2tbs sweetener , 1 stick butter and 1 1/4 to 11/2cups carbalose flour!!! BAM! works great for cookies too the flaky jam filled ones!!! comes together so quick! fridge for half hour. It does harden the longer it sits in the fridge so I would recommend removing it 10mins prior to forming.

Once heating the veggies for awhile I added that to the cooked chopped turkey with some shredded cheddar cheese and yes I did use ONE CAN of cream of chicken soup. you don’t have too but it works so well and the little carbs in it is NOT going to throw you off…unless you eat the whole damn pie LOL….recipe is below let me know if you try it!

Thanksgiving Turkey pot pie

Crust:

4oz cream cheese

1 stick butter

1 ¼ cup to 1 ½ cup carbalose flour

½ Tbs sweetener

Filling:

Leftover turkey chopped

4tbs butter

1 can of cream of chicken soup (optional)

1 cup shredded cheddar cheese

2 stalks celery diced

2 cloves crushed garlic

½ cup peas

½ cup diced carrots

½ cup green beans

½ cup corn (optional)

2Tbs Italian seasoning

Salt

Pepper

1tbs onion powder

½ tbs garlic powder

1 tbs paprika

¼ cup diced onion

Mix crust ingredients starting with 1 cup flour add the rest as needed until the mixture comes together…it will look loose let it mix in stand mixer it will come together or use hand mixer

Wrap in plastic and place in fridge for at least 30mins

Meanwhile in a pan melt butter and add corn, celery, carrots, onion, garlic, peas, beans cook until starts to sweat and onions are translucent. Add seasonings and mix well

Place turkey in a large bowl place cooked veggies in with turkey add cheese and canned soup if using. Mix well and adjust salt and pepper and more seasonings to your tase

Take dough from fridge and roll out on a lightly floured surface till about 1/8 inch thick.

Lightly grease an 8X8 baking dish and dump turkey mixture into pan. Smooth out and lay crust on top gently pressing down to cover. Slice top to vent and brush with egg

Bake in 350F for 25-35 minutes till lightly golden. Let set for 5mins then enjoy!
