So decided to try a chicken and biscuit sammie! I prefer to grind my own chicken although you can use store bought ground chicken. I made my seltzer biscuits yesterday and deiced to have it on that! recipe is here and on my facebook group.

we also make our own breadcrumbs!! using low carb bread toast on high setting without burning of course then run through a food processor! bam delish breadcrumbs!

I used a mixture of the chicken and seasonings and one egg to bring this together! and it worked so well then browned the patties in a heated pan with oil then finished in the oven! and we can freeze this for later!!!! what a quick meal!

I added mayo and pickles of course!!! even joey inhaled it! below is the written recipe!! enjoy!
Chicken Patties
What we need:
2 chicken breasts (or store bought ground chicken 1 pound I prefer to grind my own)
2 cups breadcrumbs (recipe is in files and in my cookbook)I use low carb bread toasted on high setting and ran thru food processor.
1 Tbs Italian seasoning
ΒΌ cup diced onion
1 Tbs garlic powder
1 Tbs paprika
1 Tbs onion powder
Salt and pepper
1 egg
Β½ cup milk or almond milk
4 Tbs oil (I used avocado)
Pre heat oven 375F
What we do:
Cut chicken in chunks and add to food processor with ΒΌ cup breadcrumbs and all remaining ingredients EXCEPT THE MILK AND OIL and mix on high until it forms together into a ball almost.
Put milk in a dish and remaining breadcrumbs in a separate dish. Form meat mixture into patties and press lightly into the crumbs then into the milk the into the crumbs again.
Repeat until all patties are formed 6-10 patties depending on size. Heat oil in a pan fry each patty on both sides until golden about 4-5 mins a side. Remove to a lightly greased cookie sheet. Once all are browned and fried put in preheated oven for 15-25 minutes depending on the thickness. Cook till internal temp is 165F
This was a great way to use up leftover chicken. The breadcrumbs gave it a great flavor and the chicken was cooked through.

yes a great way for leftover chicken. this was fresh chicken breasts i bought but leftover chicken works great too!

Looks yummy,can’t wait to try it! Just flipped through the cookbooks Friday and made meal plans for a few recipes! Green bean casserole is one I’m totally excited for..I made a cinnamon roll outta the low carb tortilla for a snack today- π. Take care and Thank You for all you do!
